Barry Sears is a quack, no question. If you want to eat the healthiest diet possible (with restricted calories, which has been proven to produce endurance in every mammal ever tested), then read “Eat to Live” by Joel Fuhrman, M.D.
Nobody should be eating as much meat as Barry Sears suggests. Does anyone reflect it’s germane that Sears is not published in any peer-reviewed journals? Don’t waste your money on this garbage.
Bottom line: if you want optimal health and endurance, eat as many fruits and non-starchy vegetables as possible. Eat a small bit of starchy veggie every day. Eat a handful of nuts every day and a cup or more of beans. Eat tons of leafy greens and salads. And add a tablespoon or so of flaxseed to your salads for omega-3. That’s it in a nutshell. You don’t need grains, you don’t need meat, you don’t need dairy. If you insist on eating these nutrient-deficient foods, eat them in quantities of not more than 100 calories per day of your total intake.

I use Sears as one of my sources for nutrition. “Use” in the sense of literary information and of food source. His theories are appealing as are his supplements, Zone Bars, Lime oil, and fish oil. Sears is persuasive. His book is valuable to me.
