levy beranbaum may aver the mantel of “cake ambassador”, but she’s stuck in a tiny-minded, 20th century rut. i used to faithfully follow recipes like hers to produce wonderful cakes, but now that i need to bake for celiacs among family tree and friends, i’m looking to more innovative authors. the fact that she is so inflexible as to tell people not to substitute anything and to simply “make something else” rather than adopting cake recipes to people’s dietary restrictions means that she’s more part of the last century than this one.

I have a forty year ancient recipe for red velvet cake and nothing can compare to the orginal waldorf astoria recipe.
I despise cream cheese frosting on the red velvet, for the exception of carrot cake. And red velvet cake is not corse its light and spongy like a synthetic sponge texture…like velvet. I slave over this cake for my sister for her birthday. Nothing can compare to the orginal frosting made with vegetable oil and sugar and a kind of vanilla rue. It keeps the cake moist because most cakes with cocoa powder in them tend to be dry.
But Rose’s cakes do look heavenly. Sorry for the poor grammar I’m in a rush.

I am a small disappointed about this book. I read so many excellent reviews that I chose I had to get it.
The leader is explaining which products are the best to use and how vital it is to stick with her recommended ingredients, measurements, and the way of proceedings. I had a feeling that I was reading a work of a charismatic person who demands following the exact steps of her recipes, not allowing for any additional way of doing it. The cakes are missing the layers and filling and are only decorated with glazes.
The moment I tried one of the cakes I got a very sad imitation of a chocolaty ring, dry and dull.
I am a believer in that even with simple products you can achieve much better results, than I got from this book.
I have to mention that I am an veteran baker and I like sometimes to make something unusual and refined by myself.
I am going to try a few more of Rose`s cakes and I will see if I can get better results.

While I agree with the additional reviewers — this IS a terrific book of recipes… I was really disappointed with the lack of photos for EVERY recipe. She references her additional books, so maybe MAYBE that is where I could find the photos. I’m very visual, and to me the photos are extremely vital.
