This is the first time I have been compelled to submit a review or return a cookbook to Amazon.com demanding full refund. I bought it because of the fantastic reviews. Beware. I feel misled. I must have a hundred cookbooks and pride myself on the variety and styles of cooking in my cookbook library. I did not even want this book on my shelf and had no interest in trying any of the recipes. This is the first time I felt I made a poor choice by reading others reviews. Just beware on this one. I want a excellent basic introduction to Indian cookery, but judge me, this is not it. The recipes may be fantastic, but if one isn’t inspired to try them, the book is a dust collector. I was only inspired to return the book for refund.

While the recipes in this book may be tasty, they certainly don’t live up to the promise of the title. This may be a excellent book for the accomplished cook who wants to add some Indian recipes to their repertoire, but a beginner looking for truly simple versions of classic Indian favorites should look elsewhere.

I was dissappointed that the very first recipe I tried was missing an ingredient; Onion Fritters (page 20), the instructions say to add the water but it is not listed on the ingredients list so the amount is left to guesswork, which I promptly guessed incorrect and finished up with a much soupier mixture, to which I had to add more gram flour to get it to the consistancy needed. Could a name query the leader for the right amount of water? I only hope that this is the only recipe with an error in it.

Ms. Jaffrey has a one hour program on television that we watch religiously and therefore we felt compelled to try out the recipes in her book. This is a fantastic book for North Indian Cooking. Myself and my spouse, Jameson Thottam like to cook at home together. We like to try different recipes and on occasion like to trade recipes as our own mode of exchanging insider trading tricks with additional cooking afficiandos. When my spouse comes home after a long day at work, he works in the financial aspect of businesses’(he used to work with Morgan Stanley, Homestore and IndyMac Bank), he unwinds by joining me in the kitchen. This book has allowed us to explore the different aspects of North Indian Cooking. Indian cooking allows for the use of exotic ingredients such as, turmeric, coriander, curry leaves, tamarind, sec kanjii powder, manjala, pullie,… I look forwards to the south indian version of this book. Ms. Jaffrey’s simple to follow style is addictive to perfecting cooking secrets.

I establish these recipes disappointing. The flavors are OK, but generally the texture is mediocre (could be me, although I don’t have issues with cooking non-Indian food), and the recipes take much longer than the promised 30-45 minutes. Pay attention to recipe sizes too–these make LOTS of food, so you may want to halve the recipes on your first attempt so you don’t wind up with an overflowing pan of meat that you’re not crazy over.
