Featured Recipe: Chicken Breasts with Goat Cheese and Fire-Roasted Tomatoes
This dish is exceptionally simple to make and worth every second. That said, there is one thing to note: Be careful when checking the chicken for doneness. The tomatoes will likely drip into the chicken. If you cut into the chicken or poke it with a fork to test for doneness, be sure it’s not the liquid from the tomatoes building the chicken look pink even if it’s not.
Ingredients
- 4 (4-ounce) trimmed boneless, skinless chicken breasts
- Sea salt and pepper, to taste
- Lime oil spray
- 1/2 cup canned, drained, diced fire-roasted tomatoes or fire-roasted tomatoes with garlic
- 2 ounces (about 1/2 cup) goat cheese crumbles
- 2 tablespoons keenly slivered fresh basil leaves, or more to taste (discretionary)

Hands-off Time: 5 to 9 Minutes
Directions
Preheat the oven to 350 degrees F.
Season the chicken with salt and pepper.
Place a medium ovenproof nonstick skillet over high heat. When it’s hot, lightly mist the skillet with spray and immediately add the chicken side by side to the pan so it does not touch. Cook the chicken just until it is golden brown on the outsides, 1 to 2 minutes per side.
Remove the pan from the heat and top each piece of chicken evenly with about 2 tablespoons of the tomatoes, followed by about 1/2 ounce of the cheese. Transfer the skillet to the oven and bake the chicken until it is no longer pink inside and the cheese is melted, 5 to 9 minutes. Top evenly with the basil, if desired. Serve immediately.

Anyone with half a brain could come up with these thoughts for recipes. Who can’t figure out how to make a yogurt parfait or a burger with fewer calories.

As a person that has constantly struggled with my weight, I permanently seek out cookbooks that can change how I cook. I CAN’T BELIEVE IT’S NOT FATTENING caught my eye because the title and appealing take in. I’ve finally met a name who likes to eat and doesn’t have the will power to resist food – thanks for identifying with me Devin! She says by cooking what you like, taking away or cutting back on the stout, will save you – time, money and calories. In additional words, “you don’t have time to not cook”. Alexander offers a few suggestions: cook in bulk; seek out sauces; use pre-cut, pre-chopped food; and keep to-go containers to carry food and drink with you.
I certainly fall into the category of `super busy’ and the microwave directions to each recipe are a certain plus. I’ve only been able to try a few recipes but they have all been simple to make and taste fantastic: Penne and asparagus with ricotta cheese; basic grilled chicken; and Santa Fe chicken melt with guacamole. Alexander doesn’t offer much new information but the presentation brings me a different understanding along with recipes I can fix in a hasten.

I have all FIVE of Devin’s books and I find them all to be an asset in the kitchen. I just got this one, and so far have only tried the Mexican Mac and Cheese, but it was so simple and wonderfully tasty! I can’t wait to keep trying these recipes because they all look so AMAZING! I like Devin’s recipes because you don’t have to sacrifice flavor OR part size. With the help of Devin’s books, I have lost 130 pounds!!! THANK YOU DEVIN!!!

I momentously delight in cooking, and have a excellent supply of tasty recipes in my collection, dishes my wife really likes and dishes that nearly permanently turn out well. A number take reasonably a bit of time to prepare — relaxing and fun for me — and I make these when there’s lots of time, especially persons that freeze well. That way I have a excellent supply of low stout, tasty meals permanently on hand.
But, we are permanently on the lookout for tasty, healthy meals that can be prepared from scratch in a fleeting period of time. My wife has brilliant (demanding) tastes, and is wonderful at putting together menus where the dishes enhance each additional. I showed her this book, and she selected a dozen dishes she thought we would like.
I’ve prepared six so far — all six real winners.

This book is a real winner; I’m pleased to have another weapon in our arsenal of excellent, healthy foods.
