I like this book. I’ve been building my own soft cheese for about two years now and thought I want to “branch out”.
The recipies in this book are simple to follow and absolutely wonderful. I also loved the one-page tales about additional cheesemakers and their experiences.
Ricki’s soft cheese recipies are a small more intricate than the one I have been using (an very ancient Roman recipe) but just as tasty.
Some of the more intricate cheese recipies may be intimidating to novice cheesemakers but give them a try! Cheesemaking is a bit of experimental alchemy but that’s part of the fun (IIMO).

I really like this book, it was written for me, a name with no experience building cheese. I will be using it a lot. I have additional cheese building books and they are excellent as well, but this one makes me feel confident I will make it at building cheese.
