Green is a very relaxing colour. Looking through this book calmed me. It is laid out in a very attractive way with some gorgeous food photography and lots of cool greens.
Appearance aside, it is a very nice book for people who have a lot of time on their hands (the “quick” part of the title seems a bit misleading) and have fresh herbs available a lot, because most of the recipes call for persons. The recipes tend toward elaborate, at least for my cooking habits.
Since I do mostly lacto-vegetarian cuisine and do not use vinegar in my cooking, a lot of the recipes would need some adaptation before I would be able to use them, but I tend to adapt stuff anyway. There are a lot of appealing thoughts in the book and I will certainly be experimenting (for instance, I’ve never roasted vegetables and would delight in trying that).
So if you’re into cooking and want some new thoughts, this is a book for you.

I really loved this cook book, it’s gorgeous to look at, well organized in chapters, levelheaded.
Chapter 1 the pantry stocking up
Chapter 2 the vegetables
Chapter 3 quick roasting
Chapter 4 quick braising
Chapter 5 hands on sauteing
Chapter 6 walk away sautéing
Chapter 7 two stepping
Chapter 8 no cooking
Chapter 9 stir frying
Chapter 10 grilling
Chapter 11 baking gratins
Parts of this to some that cook a lot will seem like common knowledge, but it’s really full of small tips everyone should know. It’s all so simple, and tasty. The photography is wonderfully done, I tried two of the broccoli recipes, superb and simple. My favorite so far is the vanilla and cardamom glazed acorn squash rings, and the best part kids thought they smelled like cookies and the green skin was edible, I permanently cooked acorn with butter and scraped it out and through away the shell, not anymore. The crispy pan fried red potatoes, yummy and so simple I recommend fresh Rosemary. I could go on and on, simple and nutritious veggie recipes.
