I bought both of these books and really hoped they would be excellent. I saw him the day before on TV. Well the books came and I should have returned them because the ingredients are not realisitic. These are not things that I would ever have on hand. All of the recipes are weird, I doubt I will ever cook one thing from them.

This book had raving reviews so I bought it as a gift for my sister who is pregnant and has gestational diabetes. To avoid taking insulin she’s had to go low-carb but it’s getting monotinous. Hence, the loving sister ordered her a cookbook because she likes to cook. After I received it and looked through it I was surprised at the number of recipes that called for “Sugar substitute – recommended: Splenda.” Yikes! THE SUGAR SUBSTITUTE/SPLENDA RECIPES ARE MOSTLY IN THE DESSERT SECTION. Splenda is an artificial compound sweetner which contains chlorine (a carcinogen) and a host of additional chemicals. Although it has been approved by the FDA as safe (in fleeting term studies only.) After reading George’s response to my comments I reflect there are less recipes than I though calling for a sugar substitute (about 20%) and if he’s right (which he should be) they are mostly in the dessert section. So this low-carb cookbook is mostly excellent for prego’s if you snub the dessert section. Just know in advance what you’re getting!

Yes, 1 star. So disappointed in this book. I raced out to buy after reading reviews. My first experience with low carb cooking/eating. Recently diagnosed with diabetes. I’ve permanently watched stout. Boy this book is full of it! I tried the zucchini ‘fries’. Supposed to cook for 15 minutes, I cooked 30 – still no crispiness, and yes, I had them on a rack. They were limp as noodles. I thought well, just eat them with a fork – new zucchini recipe. Ate one bite, so salty they were disgusting. Into the trash. Got up with a new attitude this morning, made the ‘tasty’ banana muffins. Oh. My. Goodness. They never really browned. The appearance was lumpy, texture was grainy, they were so so heavy and so so sweet. Sure didn’t look nor taste like any muffin I ever saw! Recipe made 6 – 5.75 in the trash. Out the money for the book and many ingredients……I should place the book in the trash with the food. Lots of recipes for marinated veggies, roasted veggies……I don’t call these recipes, I call them common knowledge. I also bought his additional book at the same time. Haven’t used it so that one will go back for 2 reasons. 1) terrible recipes in the additional book and 2) no calorie or stout content listed in the additional book – only carbs. I have to see the stout content because I just can’t eat all that stout that’s in a huge part of the book. Many recipes unusable right off the bat.

I judge that healthy eating includes balancing low carb, low stout and high fiber whole foods in the diet. When I heard about this book I thought it would be a nice addition to my Cooking Light and Healthy Cookbooks in an effort to add some low carb menu thoughts. I considered this a “healthy” cookbook and did know that George’s key eating focus is “low carb”. But, I was completely shocked to find that George does not include nutritional information for his recipes!
Any chef/cook promoting healthy eating should know that it is a balancing act and that like another reviewer, artificial ingredients (i.e. sugar substitues) should not be used. This book will probably get donated.
