My wife wanted this for Valentine’s Day. It went over swimmingly. She’s a bit of a cooking freak. I can’t vouch for the contents of this book, but it’s managed to give her ambitions to be an artisan chocaltier.

Going to Culinary school I had to buy this book for class. The school bookstore was robbing the students at $107.00 a copy new and $65.00 a copy used. A well loved chain of bookstores like B & N and Limits were a bit cheaper at $65.00 to $70.00 a copy new. Finally, after checking all my options, I tried online and establish it for a fantastic fee on amazon!
Total cost with shipping & handling… $43.00!

Place it to CIA to come up with the only book that contains all the information that the artisan confectioner could hope to find in a book.

But, if you are looking for a book just filled with some excellent recipes, I would recommend “The Essence of Chocolate”. Chocolates and Confections follows a textbook style and delves into the chemistry and science of formulating chocolate (and additional sweet) confections. A terrific book–it’s a heavy read, but you don’t have to be attending culinary school to know what they are talking about!
